Ingredients
2 x 140g/5oz smoked haddock portions, fresh or defrosted
15ml/1tbsp avocado oil
Black pepper
1 x large courgette, sliced lengthways
15ml/1tbsp olive oil
Method
Serves 2
Preheat oven to 200ºC/400ºF, Gas Mark 6
1 Place the fish in the middle of a double thickness square of foil. Drizzle with the avocado oil and sprinkle with the black pepper.
2 Fold the foil into a parcel and place on a baking sheet. Bake in the oven for 10-15 minutes, or until cooked.
3 Heat the olive oil in a frying pan. Add the courgettes and cook for a minute on each side, until just beginning to brown and soften.
4 Pile the courgettes in the middle of a plate and top with the smoked haddock. Serve with broccoli and carrots.
