Sam Fox's Baked Bramley Apples

Serves 4
Preparation time: 5 mins
Cooking time: 35-40 mins

Ingredients

4 Bramley apples
25g/1oz butter, melted
25g/1oz light soft brown sugar
40g/1½oz raisins
25g/1oz pecans, chopped
1tsp ground mixed spice

Method

1 Preheat the oven to 200ºC/400°F/gas 6.
2 Using a small knife or apple corer, remove the cores from the apples, making a 2cm/¾in diameter hole. Make a cut in the skin around the centre of each apple, then place them in a small baking tray.
3 Mix the remaining ingredients together in a bowl and fill the prepared apples. Cover with foil and bake for 35-40 mins or until the apples are really tender. Serve hot with custard.

Cook's tip:
If you're making these for adults, add 1tsp dark rum, whisky or brandy over the fruit in each apple before baking.

To microwave:
Assemble as above in a microproof dish. Cook on high for 7-7½ mins. Allow to stand for 5 mins before serving.
