Serves 3-4
Ingredients
2 handfuls peeled, diced potatoes
2 handfuls sliced carrots
1 leek, sliced
1.15ltr/2pt vegetable stock
225ml/8fl oz milk or 120ml/4fl oz milk and 120ml/4fl oz single cream
Salt and pepper, to taste
Method
1 Put the potatoes, carrots, leek and stock into a saucepan. Bring to the boil, then reduce the heat and simmer for 25-30 mins.
2 Purée half the vegetables and liquid in a blender. Empty into a bowl, add the milk and a pinch of salt and pepper. Stir.
3 Serve cold in chilled bowls. Garnish with cold, sliced scallions very sparingly.
