
Ingredients
3 egg whites
150g/5oz caster sugar
½tsp vanilla essence
½tsp vinegar
1tsp cornflour
250ml/9fl oz whipped cream
Fresh strawberries, raspberries, pineapple or fruit of your choice
Method
1 Preheat the oven to 140°C/275°F/Gas 1.
2 Draw an 18cm/7in circle on non-stick paper and place on a baking sheet.
3 Beat the egg whites until very stiff. Gradually beat in the sugar. Add the vanilla essence, vinegar and cornflour.
4 Spread the meringue mixture over the circle, making a hollow in the centre. Leave the cooked meringue in the oven to cool completely before peeling off the paper.
5 Pile the whipped cream in the centre and top with fruit.
