Ingredients
225g/8oz rice
1 large onion
150g/5oz bacon
2 eggs
1 heaped tsp Marmite
2-3tbsp vegetable oil
Method
1 Boil the rice using your preferred method.
2 Peel and slice the onion, trim and chop the bacon and beat the two eggs.
3 Dissolve the Marmite in a cupful of boiling water and stir well.
4 Heat the oil in a large frying pan. Add the sliced onion, fry gently, then remove
from the pan. Fry the bacon and return the onion to the pan.
5 Pour the beaten eggs over the mixture and allow the eggs to cook slowly, stirring constantly. Keep adding the cooked rice.
6 Finally, add the Marmite, bringing the mixture to the boil, then turn down to a simmer until excess moisture has evaporated.
7 Serve piping hot with soy sauce (if liked).
