Ingredients
6 baking potatoes
6 hard-boiled eggs, chopped
¾ jar India pickle relish
1tsp Dijon mustard
175g/6oz mayonnaise
Pinch of sugar
Salt and pepper to taste
Paprika
Method
1 Boil the potatoes with skins on until tender (don't overcook). When done, place in cold water to cool, remove the skins and cut into bite-size cubes.
2 In a bowl large enough to eventually take all the potatoes, mix together the hard-boiled eggs, pickle relish, mustard, mayonnaise, sugar and salt and pepper. Add the cooled cut up potatoes and mix well.
3 Taste to adjust the seasonings. You may need a tad more of the relish and mayonnaise.
4 Place in a bowl for serving and sprinkle with the paprika for colour.
5 Place in the refrigerator until time to serve. This will allow the flavours to blend together.
