Sue Nicholls' Banana & Walnut Loaf

Audrey, sorry, Sue Nicholls bakes an old favourite

Sue Nicholls

Ingredients

115g/4oz margarine
175g/6oz soft brown sugar
2 eggs
2 ripe bananas
225g/8oz self-raising flour
1tsp baking powder
1tsp ground mixed spice
50g/2oz walnuts, chopped

For the topping
1 banana, sliced and dipped in lemon juice
2tbsp clear honey

Method

1 Preheat the oven to 180°C/350°F/Gas 4.
2 Cream together the margarine and sugar until light and fluffy. Gradually beat in the eggs and
bananas.
3 Sieve the flour, baking powder and mixed spice and fold in lightly. Stir in the walnuts. Spoon the mixture into a greased and lined 900g/2lb loaf tin.
4 Bake in a preheated oven for 50-55 mins until well risen and golden. Cool on a wire rack.
5 When cold, decorate with the sliced bananas and brush with honey.
