Ingredients
565g/1¼lb swede
565g/1¼lb yams
450g/1lb carrots
450g/1lb turnips
450g/1lb potatoes
700ml/1¼pt apple juice
4tbsp balsamic vinegar
3tbsp olive oil
8 garlic cloves, halved
Salt and pepper, to taste
Method
1 Preheat the oven to 220°C/425°F/Gas 7. Cut the vegetables into 1cm/½in cubes.
2 In a large saucepan, boil the apple juice and vinegar for 30 mins. Stir in the olive oil and garlic.
3 Toss the vegetables in the glaze and place in a single layer in 2 roasting pans. Season with salt and pepper. Bake for 40 mins.
