Carol Smillie's Banoffee Pie

TV presenter Carol swaps DIY for oven gloves

Serves 12
Ingredients

1 can of condensed milk
1 large packet of digestive biscuits
½tsp dried ginger
225g/8oz unsalted butter, melted
10-12 bananas
1½pt double cream
50g/2oz caster sugar
1oz dark chocolate

Method

1 Boil the unopened tin of condensed milk in a pan of water for 2½ hours and leave to cool for at least 6 hours before opening. Do not allow to boil dry, as the tin will explode.
2 Place the biscuits in a Robo Chef or Magimix and grind until crumbled, add the dried ginger, then slowly add the melted butter. Place the mixture in a loose-bottomed flan dish and allow to set in the fridge for about 30 mins.
3 Carefully open the can of condensed milk. This will be set, so you can spread it on to the base. Slice the bananas into the base – you can use as little or as many as you wish. Whip up the double cream with the caster sugar and pipe all over the bananas.
4 Grate the dark chocolate over the cream and put it in the fridge until ready to serve.
