Serves 4
Ingredients
15 young leeks
10 new potatoes
Butter
2 cans anchovies
Salt and pepper
275ml/½pt cream
150ml/¼pt milk
Breadcrumbs
Freshly grated Parmesan cheese
Method
1 Preheat the oven to 160°C/325°F/Gas 3.
2 Cut the leeks into small pieces about 1cm/½in in diameter and parboil with the potatoes (cut these in half if they are large).
3 Butter an ovenproof dish. Add the leeks, potatoes and anchovies (drain the fish if they are in oil). Add a small amount of salt and some pepper. Mix the cream and milk and pour over. Add the breadcrumbs and top with the Parmesan cheese. Cook for about 35 mins.
