Ingrdients
1 spaghetti squash
1 225g/8oz box tofu
225g/8oz jar tomato-based spaghetti sauce
Seasoning, to taste
Method
1 Preheat the oven to 180°C/350°F/Gas 4. Wash the squash and cut in half. Remove seeds. Place the halves face down in a baking dish. Cook the squash for about 40 mins or until flesh is tender.
2 Meanwhile, marinate the tofu in the tomato sauce and seasonings and place on a low to medium heat for 10 mins or until the squash is cooked.
3 When the spaghetti squash is cooked, allow it to cool enough to handle. Scoop out the inside into a bowl. Cover thoroughly with the sauce.
